Five on Friday

I am currently on my way to Tahoe to celebrate the wedding of my friend Liz. I am so excited to see everyone!! It's going to be a crazy weekend because I leave for Vegas tomorrow to head to another wedding. Busy, busy! One- What I've Been Cooking

I have been cooking some new recipes lately so I thought I would share a couple pictures.


I made the Against All Grain buffalo chicken salad and homemade paleo ranch. This isn't the best picture but you get the idea :) It was so yummy and I ate it several days in a row for lunch. I'm planning on doing a dedicated blog post to this recipe soon!


Sweet potato hash and fried eggs are a go-to for me while Mark is out of town. It's a quick and easy way to make a healthy dinner that's filling and satisfying. I use Nom Nom Paleo's hash recipe except I  add more of the garlic powder, onion powder, and pepper. Find the recipe here.

The Pioneer Woman's mashed potatoes were incredible. They are potatoes with cream cheese, half & half, and garlic... need I say more?? Find the recipe here.

I made Juli Bauer's Sticky Lemon Chicken from her new cookbook this week. Oh man, so stinkin' good! I'm not really a huge chicken fan but this was just delicious! I added some avocado to mine and also mixed in some rice. The recipe called for cauliflower rice, which normally I would love to make, but my grocery store didn't have any cauliflower that looked good. I settled for white rice since it's what I had at home. It was yummy :)

I just bought this book for my upcoming trip this weekend. I will have a lot of time in a plane and car so I figured I better stalk up on reading materials. This looked super interesting and different so I picked it up. This is pretty far from my normal read but I was immediately drawn into the story. I'll do a review when I'm done ;)

Three- New Cookbook to Obsess Over

Last week I realized I still had an Amazon gift card in my wallet from Christmas! I was so excited because I have a serious wish-list going on in my Amazon account. Most of the items are cookbooks... wow, I'm exciting lol. I decided to purchase the Juli Bauer cookbook that I talked about a few weeks back in my Cookbook Collection/ wish list. I love cooking paleo/ gluten free when it's possible and I knew I was going to find some great ideas in her new book. I've only read through a little bit of it but I made the Sticky Lemon Chicken on Monday. It was soooo good! I accidentally added too much broth so my sauce didn't thicken up as much as it was supposed to but I still think it was a win. I can't wait to check out some more recipes soon.

Four- Random Blog Help


So I need some help. This keeps happening to my blog every couple of weeks. It goes away within 24 hours but I can't figure out why it keeps happening. I have contacted the person who designed my template, re-uploaded my template, posted on forums, contacted my domain host, contacted blogger, etc. but no one has an answer for me and nothing is working. Have any of you seen this on my blog? If so, I am so sorry! I am working on getting it fixed so please just check back the next day if this happens. For all my techy readers and blog friends- HELP! How do I fix this?? Thank you for listening to my freak out... on with the Five on Friday :)

Five- Reunited :)

I get to see some of my closest friends this weekend. This makes me so excited and fills my heart with happiness. Also, I get to finally see my hubby! YAY! He's only been gone for 2.5 weeks but I've still missed him like crazy. It's funny that no matter if he is gone for a 9 month deployment or 6 days, I will always miss him. I never get "used to" the time apart. The traveling part this weekend is going to be a beast since I will be going from SD to Reno, then driving to tahoe, then back to Reno to fly to Vegas, then driving back to SD. AHHH! It will be worth it though!
