This was the LONGEST week ever! As I'm writing this I still can't believe I still have work today. It seemed like Friday days ago lol. Anyways, enough complaining! Let's jump into this Friday Favorites.

I attended a Memorial service this week for someone who died too young but died doing something he loved. It really made me stop and think about my life and the way I live it.  Hearing story after story about him, it really made me question how I live and the silly things that I worry about. I am afraid of a lot of things that end up holding me back. 

He lived a life of adventures, always doing things to the fullest. I am not an adventurous person... at all lol. He truly clung to his faith and believed in a bigger purpose. Do I cling to my faith when things get rough? I know I try to but I can be better. Every word that was spoken today touched my heart in some way. I know that I will never forget the what I witnessed today and the amount of support that was shown by this community.  

I'm so thankful for the brave men and women who selflessly defend this great nation. I pray for the family members that were left behind because their journey will not be easy.

Califia Farms Almond Creamer

I try to avoid dairy when at all possible but I also like a little bit of cream/ sweetness in my coffee. I've tried some different coconut milk creamers but this almond milk one is so yummy! It's definitely not like the sugar-laden creamers I used to love but I like that it adds some flavor to my daily cup. YUM!

I just finished the Rosy Project and just downloaded the Rosie Effect. I thought I was getting the audiobook version so I was bummed when I realized it was an iBook lol. Oh well. I'll read it when I'm done with Weird Sisters. I'm also currently listening to The Wedding by Nicholas Sparks. Very different books but I'm liking them both so far!


Redefine


I have been using the Rodan+ Fields reverse regimen since January and I LOVE it. My skin is so much brighter and my sun damage is fading. I was nervous to try another regimen because I didn't think I would love it as much as reverse. Well, I was wrong! I started using Redefine at night to help with pore size and fine lines. My face feels amazing each morning and I love what it's doing for my skin. :)

10 Paleo Recipes You Need To Try

If you've read any of my blog posts, you've probably come to the conclusion that I love food. I also really love to cook. Most of the time I try and cook paleo-ish meals because my hubby and I both feel better when we eat this way. Every now and then I'll whip out my Pioneer Woman cookbooks and make something laden with butter because why not, right?? lol With Pinterest and other blogs and websites, it can be hard to navigate through the recipes to find things that are truly delicious. So I've decided to give you a head start and tell you about my current faves.

Pesto-stuffed Prosciutto Wrapped Chicken



Ingredients: 
1 teaspoon extra-virgin olive oil
6 boneless, skinless chicken breast halves
1/4 teaspoon sea salt
1/4 teaspoon cracked pepper
3/4 cup of pesto sauce (you can make your own if you are sensitive to dairy)
12 slices of prosciutto, thinly sliced

Directions:
1. Preheat the oven to 350 degrees. Spread oil on the bottom of a 9x12 baking dish. 

2. Prepare the chicken. With a sharp knife, cut a 1-inch long slit into the thick side of each chicken breast. Gently use your finger to expand the pocket. Season the check with the salt and pepper.

3. Stuff each pocket with 2 tablespoons of Pesto sauce, then wrap them tightly with slices of prosciutto so that the slits are covered, tucking the ends of the prosciutto under the breasts. 

4. Place the chicken seam side down in the backing dish.

5. Bake for 35 to 40 minutes, until the chicken is cooked through. After 20 minutes turn the chicken over.

Spaghetti Squash Lasagna

Parsnip Fries


Ingredients: 
3 large parsnips, ends removed, peeled
3 tablespoons melted coconut oil or butter
1/2 teaspoon fine sea salt
1/4 teaspoon garlic powder

Directions:
1. Preheat oven to 375 degrees. Line a baking sheet with parchment paper.

2. Cut the peeled parsnips into a french fry shape.

3. Toss the fries in the melted coconut oil, then sprinkle with salt and garlic powder. Toss once more until coated.

4. Place the fries on the lined baking sheet, making sure they don't overlap. Bake for 25 minutes, until slightly soft but crispy on the bottom.

5. Remove from the oven and toss the fries. Turn up the oven temperature to 500 degrees, then bake for 8 to 10 minutes, until the fries are crispy. Keep an eye on them to make sure they don't burn. 

These are a new found favorite!

Lindsay over at Seven Layer Charlotte has the best recipes. This is one that we make all the time. I even use it as a side for dinner, not just breakfast. YUM! Tell her I sent you if you check out her blog :) Click here to see the recipe. 

Maduros


Ingredients:
2 very ripe brown plantains (get the softest ones you can find)
1/4 to 1/2 cup coconut oil
pinch of sea salt

Directions:
1. Cut the ends off the plantains and peel them.  Cut the plantains into 1-inch diagonal pieces. 

2. Place 1/4 to 1/2 cup of coconut oil into a small sauce pan over medium heat. You want the fat to cover the plantains halfway. When the oil is hot, add the plantains and cook for about 2 minutes on each side. They should be golden brown. *Juli also suggests cooking them in small batches.

3. Reduce the heat to low and keep cooking, turning every minute so that the plantains caramelize. Place them on a paper towel to soak up the excess oil. Sprinkle sea salt on top before serving.

Slow-cooker Beef Chuck Chili


Ingredients:
2 teaspoons coconut oil
2 1/2 lbs beef chuck, cut into 1/2 inch cubes
2 red bell peppers, seeded and diced
1 small yellow onion, chopped
1 28-ounce box of jar chopped tomatoes
1 1/2 cups beef broth
2 tablespoons tomato paste
2 cloves garlic, minced
1 bay leaf
2 1/2 tablespoons chili powder
3 teaspoons sea salt
2 teaspoons cumin
1/2 teaspoon paprika
1/2 teaspoon curry powder
1/2 teaspoon cinnamon
1/4 teaspoon black pepper
1/2 teaspoon cayenne pepper
1/2 teaspoon red pepper flakes
1 ounce unsweetened chocolate
garnish: cilantro, red onion

Directions:
1. Place the oil in a large skillet over medium-high heat. Add the meat and brown on all sides, about 10 minutes.

2. Drain half of the fat, and then pour the remaining fat and meat into a slow cooker.

3. Add the remaining ingredients, except the chocolate, and cook for 6 hours on low.

4. Stir in the chocolate at the very end and adjust the salt to taste.

5. Serve garnished with cilantro and red onion.

Cauliflower Rice


Ingredients:
1 head of cauliflower cut into florets
2 teaspoons of extra-virgin olive oil
1 teaspoon sesame oil
1/2 cup finely diced yellow onion
1 clove of garlic, finely minced
1/2 cup water

Directions:
1. Place the florets into a food processor with a grating attachment. Process until it looks like "rice grains." 

2. Heat the oil in a large skillet over medium-high heat. Add the onion and garlic and saute for a minute.

3. Add the riced cauliflower and continue cooking for 5- 7 minutes, until the onion is translucent.

4. Add the water and cover and steam for 5 minutes, until the cauliflower is cooked and the water has been absorbed. 

Such a great go-to side!

Weekend Recap: Tracy's Last Flamingle




This past weekend, I went to Palm Springs for my cousin Tracy's bachelorette party. Laura, her sister, did an incredible job and really nailed the Flamingle theme. Everything was adorable!

 Katy and I drove there after work and got there just in time for dinner. We hung out at the house that night and it was super low-key. **Some of these pictures aren't mine so thanks to all the girls who took great pictures :)










On Saturday, we spent the day in the pool. The weather was perfect and we managed to miss the rain! We went to Eight4Nine for dinner and it was delicious. The entire restaurant was white... very Palm Springs. Love it! Our server was a little all over the place but we still managed to have a great time!

On Sunday, we ate breakfast and then packed up the house.  It was a great weekend and I'm so glad that we could celebrate the future Mrs. Quinn!


Mom, I want to be just like you...



My mom is the best. I know, I know I'm a little bias but I love her to pieces. I'm so lucky because she isn't just my mom, she's my best friend. We like to do the same things like go on walks, do yoga, have Wine Wednesdays, shop, and cook. It's even better when we can do them together :) We have such a special bond and I'm always striving to be more like her.

My mom is a very selfless person. When we were growing up my dad was in the military and often worked long days and overnighted at work once a week. He even deployed for a year and my mom held down the fort at home. I never heard her complain about having to be the mom and dad while my dad was away. She just did what she needed to do.

My mom is an elementary teacher and has worked full-time my whole life. I'm still amazed how mamas teach all day and then have the energy to come home and love on their own kids. Yet, she did this day after day. She's also a pretty phenomenal teacher. I got the opportunity to teach with her for a few weeks during the summer one year. It was such a neat experience to see my mom in action and to also work closely together. This is something I'll never forget!

I talk to my mom every. single. day. We always talk on the way to work and I often call her on my way home as well. You know we talk too much when we have nothing else to say haha. I just call her to say "hi" anyways! I look forward to these morning phone calls and I'm fortunate that we have similar teaching schedules.

I actually moved back in with my parents during my husband's first deployment. I was still living in Vegas and we were trying to save money for our wedding. Technically we were already married but we had planned a larger ceremony and a reception for the following year on our anniversary. My parents welcomed me and my two pups in with open arms. It's not easy to have a grown-child move in but we had the best time. I'm so grateful for those 9 months and how they took care of me while Mark was gone.

My mom has shown me how to be a loving wife. She takes really good care of my dad and I always knew I wanted to do the same for my future hubby. How am I doing, Mark?? :) She's also a great host. People will come over at the last minute and her house is magically clean and she has plates of appetizers waiting for them. How she does this is beyond me! I hope I will master this skill one day.

I know the kind of mom I want to be from watching my mom raise us. I want to be caring, fun, compassionate, loving, and to also have high expectations. We were never allowed to sit back and do the bare minimum. I love that! As a teacher, I know that if you have high expectations for kiddos, they will rise to the occasion.

I can't wait to start my own family and I'm so thankful that my mom has been so kind and patient with me through this whole process. There are many days when I'm angry or just plain sad that our lives have not turned out as I imagined. She has listened to me rant and cry more times than I can count. She carefully walks that line of feeling the pain with us but not letting me wallow in it. Thank you so much for that mom! I know you'll be a grandma one day. I love you mom!






Last Minute Mother's Day Ideas

Happy Mother's Day weekend to all the mamas out there! Also, to all the women who wish they are moms... my heart goes out to you.

These Kendra Scott earrings are beautiful! I also love these Tori Burch sandals. They are classic and go with everything. Both would be such nice gifts for a mom, especially since they don't spoil themselves often. At least I know my mom doesn't!

This cookbook has the most stunning pictures! That's a huge component for me when picking a cookbook. It needs to be appealing to the eye and this one definitely fits that criteria. All of the recipes are low sugar and gluten free. Plus they are centered around quick weeknight meals for a busy person.

I love these classic but so comfy looking pajamas. These would be great for a traditionalist or even for someone who seems to have everything. You can never have enough pjs!

This Kate Spade wristlet is so cute! A friend at school recently got one and I LOVE it. The design is classic and who doesn't love Kate Spade??

If you're mom loves beauty items or even if she doesn't have any premium products, she needs the Rodan+ Fields Night Renewing Serum in her life. It's the holy grail of anti-aging and feels like silk on your face! Email me if you want some info.

If your mom doesn't need "stuff" but likes to do something together, you could always plan a spa day. Last year for Mother's day I got my mom a facial and she loved it. I also like the idea of going to a brunch and then getting manicures/ pedicures together. Cooking dinner for you mom is always a nice option! Anything to spoil your mama! :)
