Giada's House Soup


During the cool and rainy weekend (two weekends ago) I made this scrumptious soup I found in the Food Network magazine. It's a hearty, veggie-packed soup that is topped with parmesan cheese... what could be better?? It made my house smell amazing as it simmered for a couple hours and was super easy to make. Sometimes I feel like the Food Network magazine recipes can be complicated but this wasn't bad at all. Giada's recipes are always delicious and she considers this one of her detox soups... count me in! I can't wait to make it again when Mark gets back from his trip!

Here is the recipe:

  • 2 tablespoons of extra- virgin olive oil
  • 1 leek, white and tender parts only, finely chopped
  • 2 carrots finely chopped, 1 sliced ( I used a little less because I'm not a huge carrot fan)
  • 1/2 fennel bulb, finely chopped (I forgot this step, whoops!)
  • kosher salt
  • 1/2 teaspoon red pepper flakes
  • 3/4 cup dried small white beans, such as navy
  • 1/2 cup of farro
  • 15- ounce can diced tomatoes
  • 2 quarts chicken stock
  • 2 to 3 sprig thyme
  • 1 2-inch piece parmesan cheese rind
  • 13 ounces turkey or Polska kielbasa, cut into half moons
  • 4 to 5 large leaves of kale, chopped
  • grated parmesan cheese and fresh lemon juice for serving (optional)
1. Heat the olive oil in a large soup pot over medium heat. Add the leeks, chopped carrots, and fennel. Season with 1/2 teaspoon salt and the pepper flakes. Salute slowly until the vegetables are very soft but not browned, about 3 minutes.

2. Add the white beans and farrow and toast for a minute of two, then add the tomatoes with their juices and the chicken stock, thyme, parmesan rind, and 4 cups of water. Bring to a boil, then reduce the heat to a steady simmer. Cook, stirring occasionally, about 1 1/2 hours, or until the beans are tender but not mushy; they should be firm and separate. Season with salt.

3. Add the kielbasa, kale and sliced carrot. Cook until the kale and carrot are tender, about 15 minutes. Remove and discard the thyme sprigs and parmesan rind. Serve with a drizzle of olive oil, a sprinkle of grated parmesan and a squeeze of lemon.

Weekend Recap

This weekend flew by and I can't believe it's Sunday night already! It was jam-packed with activities on Friday and Saturday and I had so much fun. I was terrible at taking pictures this weekend though, ugh I'm sorry! Anyways here's a little recap of my weekend...

On Friday, I went to Emily and James' house for Friendsgiving. It may seem a little early but they are renting out the top level of their house so they wanted to host their annual Friendsgiving while they still had time. It was such a fun night filled with lots of yummy food and great people. I wish Mark could have been there though. :( I made the Pioneer Woman's roasted brussel sprouts with a balsamic reduction and her decadent mashed potatoes. They are so good and FULL of calories haha. I think they were worth every bite!

On Saturday, I had brunch with my good friends Sara and Ashley. It was great to finally be able to get together and to hang with little Braxton. Although, he's not as so little any more. I can't believe he's such a big boy now! They grow up so fast! Sadly, I didn't take any pictures :( Dangit! It was a great time though. Then some friends came over to hang out before the San Diego Gulls (a minor league hockey team) game. We took an Uber to the stadium to avoid the parking situation and had a blast! I can't wait to go to more games.



I also had some caramelized onion and feta tarts. They were so yummy!




This is what Mark did all weekend... hang with this little dude. This makes my heart swoon. I can't wait to see him as a Daddy!

I slept in a little on Sunday despite the awful heat... I must have really needed the rest! Then I met up with Dina and Meaghan for a bagel and coffee. I love mornings where I don't have to get ready and I can just throw on workout clothes and go. Then it was time to run errands... grocery shop, return a couple things, etc. I spotted these adorable fringe Rebecca Minkoff bags at the NEX and I am totally swooning over the tan one. I definitely don't need another bag but a girl can dream right?? I love it!




Later, I met up with the girls again and we went to see The Intern. Oh my goodness such a cute movie. I fell in love with Robert DeNiro's character. He was so sweet! It was kind of a sad movie but I totally recommend it. Now I'm parked on the couch watching Scandal from Thursday. Why oh why did you admit to the affair Olivia??? Anyways, I hope you all had a wonderful weekend! It's a short work week for me since I'll be heading to Renp/ Tahoe on Thursday to celebrate Liz and Rob!

Five on Friday

Happy Friday everyone! I am so glad the weekend is almost here since it is packed with fun things! Plus, today is Olympic Day for our 2nd graders... so cute! One- Happy Birthday Seester!


It's my sister's birthday today! Happy Birthday Britt! Twenty-five years of torturing me haha kidding, kidding. Brittany is a very strong person with a HUGE heart. She is always taking care of the people around her and will make an incredible mother one day. Praying lots of blessings for you in the next year of your life. Two- Thankful placemats

I saw these placemats on Elise's blog: Cheers Y'all last week and I knew I had to have them. I'm a huge fan of the neutral tan color with the gold lettering AND it has fringe on the sides. I was sold immediately! I went to Target on Saturday and they actually had them! YESSS! My table is super tiny so I only needed two but they would be perfect for Thanksgiving dinner (in my dream bigger home lol). 

Three- Thanksgiving Love


Continuing with this "Thankful" theme I am loving this sign my mom got me last weekend at the Art Fair in Boulder City. I was so bummed that I couldn't be there with her and I told her to keep her eye out for some cute Thanksgiving decorations. She came through with this adorable sign.  It looks perfect in our living room. Also, my mother-in-law went shopping with my mom and surprised me with a cute wooden acorn. Thanks Mom and Lauren!

Four- Homeland is BACK!


There are very few shows that I get obsessed with but Homeland is definitely one of them. It might be my favorite show of all time... behind Gilmore Girls of course. They are totally opposite kinds of shows but what can I say... I like a plethora of entertainment lol. The first episode was on Showtime on Sunday and it immediately sucked me in once again. I can't believe how old Carrie's daughter is in this season. She's so cute! Does anyone else watch this show?? 

Five- Midnight Recovery Concentrate

I have been LOVING my Kiehl's Midnight Recovery Concentrate lately. At first I wasn't sold on it because of the smell. It's very... earthly lol. Not really my kind of scent. I have been using it more lately since my hubby is out of town. I don't want to torture him with the smell while he is home haha. After using the concentrate, I wake up with my skin feeling baby smooth and super plump looking. I have VERY oily skin and tend to shy away from oils but I've heard that they can actually help to counter-balance your oil production. I don't know if that's true because it's been extremely humid and I'm as oily as ever haha. It definitely does something magical to my skin though. Plus the price of the Kiehls Midnight Recovery is pretty great!

The Perfect Fall Outfit(s)



The weather finally cooled down this weekend and I am ELATED! As soon as I woke up and it was rainy and cooler outside I knew I could finally wear some of my fall staples. A plaid shirt is always my go-to because it's comfy and looks pulled together with some riding boots. Plus it's super easy to layer with a vest or a cargo jacket. My new favorite piece is this green cargo vest. It goes well with everything including this maroon 3/4 length shirt and the striped long-sleeve I worth it with this weekend. To dress it up a tad I would add my BP Trott booties. They are super comfy and adorable! And fall wouldn't be fall without some plaid scarves. I love big fluffy scarves and this one from Forever 21 is too cute and too inexpensive to pass up!

Rainy Day Essentials

Oh blessed beautiful rain! I love love love the rain especially when I can just hang out at home all day. As I am writing this I just got home from school where it was raining all day, which is a whole other ball game lol. The kids were cooped up inside so they can get a little crazy. Yesterday however was the perfect rainy day. I got to wear my favorite rain jacket from North Face, watch movies on the couch with a cozy blanket, and cooked delicious soup. Here are my rainy day essentials...


1. Something warm like soup is a must for cold and rainy days. I made Giada's house soup and it was soooo delicious! I even liked the kale in it which is usually a no- go for me.

2. A waterproof light-weight jacket like this North Face one is perfect. You can layer warmer things underneath it if you need to but it's also lightweight enough to just wear by itself for those not so cold days. 

3. I love a good girly movie especially when my hubby is out of town. Sixteen Candles is a classic in my mind and I loved watching it again on Sunday.

4. I tried out the Crockpot Pumpkin Spiced Latte recipe on Sunday and it was super yummy. I cut the sugar in half because I didn't want it to be too sweet. Perfect for a rainy day!

5. I am an avid reader and a rainy day gives me an excuse to curl up on the couch and read. I am currently reading this book and I really like it so far.

6. Rain boots are a fun addition to your wardrobe on a rainy day. I don't have any right now but I'm eyeing these from Target
